The roasted pineapple was served with pink pepper caramel, cashew brittle, and vanilla ice cream. It was a delicious combination, with the roasted pineapple warm and caramelized atop the caramel and brittle. The vanilla ice cream was creamy, yet not overly sweet and worked nicely with the sweet pineapple and caramel. A delicious ending to a great lunch.
