Roasted Skate with Red Cabbage, Celery Root and Black Truffle Vinaigrette

Skate Entree at Gramercy Tavern

Skate Entree

One of the great things about the Gramercy Tavern wine list is the availability of half-glasses of various wines. This makes it easy to pair wines with various courses without overdoing it (especially at lunch).

Skate seems to have become increasingly popular on restaurant menus, and while I've never prepared it myself, this rendition was delicious. The thin filet was crispy on the outside, yet moist and tender inside. The tangy red cabbage was a nice contrast to the fish's mild flavor and the celery root puree was a delicious foil to the vinaigrette.
